– Epsilon-Poly-L-lysine hydrochloride (MV 2000-5000) is an antimicrobial peptide produced by bacteria such as Streptomyces. It effectively inhibits the growth of microorganisms like bacteria, yeast, and mold, making it a popular green [research compound] and preservative in various food and beverage products. This compound exhibits numerous properties, including thermal stability, acid resistance, and broad-spectrum antimicrobial activity. It can be loaded onto other materials to form nanoparticles or nanofiber membranes for targeted delivery, providing sustained antimicrobial effects. Epsilon-Poly-L-lysine hydrochloride (MV 2000-5000) is also used as a stabilizer for liposomes.
